Hi, #foodies! This year, I had the privilege of culinarily getting to know #theonlyparmesan; Parmigiano Reggiano. So you'll be seeing a lot of it in my recipes this holiday season. Let's start with this super simple and delicious recipe that'll wow your friends! It's perfect as an appetizer for Football Sundays as well as elegant for any make-an-impression dinner. Let's get started!
Parmigiano Reggiano + Bacon Zucchini Chips
Ingredients:
1 lb zucchini (2 medium sized)
1/4 cup freshly grated Parmigiano Reggiano cheese
2 slices of crispy bacon, finely chopped
1/4 cup plain breadcrumbs
1 tbsp olive oil
1/4 tsp kosher salt
Freshly ground pepper
Preparation:
Preheat oven to 450. Coat baking sheet with non-stick pray.
Combine cheese, breadcrumbs, salt and a couple twists of pepper in a small bowl.
Cut zucchini in 1/4 inch slices. Place in medium bowl and coat with oil.
Dip each zucchini round into mixture to coat each side (press to stick if necessary) and place on baking sheet. Sprinkle bacon.
Cook for 25 minutes and enjoy.
