Breakfast is my favorite meal and if you follow @bestfoodmiami, you probably already know that. Why limit such a delicious meal to the morning? Here's an excellent and hearty dish that'll soon become a dinner time favorite.
Frittata with Bacon + Parmigiano Reggiano + Cheddar
Ingredients:
6 small potatoes (washed and diced into cubes-you can peel them if you want but I like the skin)
4 eggs
1 pack of bacon
1 small yellow onion
1/2 cup shredded Parmigiano Reggiano
1 cup shredded cheddar cheese
1 large or 2 small garlic groves (pressed)
1 tsp paprika
1/2 cup of water
Kosher salt and ground pepper to taste
A seeded and sliced jalapeño or red chile pepper for my spicy lovers
Directions:
Cook the bacon in a pan. Once fully cooked, place bacon on a plate over a towel paper to absorb excess fat. Once cooled, crumble half of bacon removing fat pieces. Keep the bacon fat in the skillet and add the potatoes and onion. Cook at medium heat with cover turning occasionally.
After about 6-7 minutes, add water and cover. Cook for 5 minutes. Add garlic, paprika, salt and pepper and mix. Remove from heat but do not turn stove off.
Add eggs, crumbled bacon and cheese and cover. Cook for 5 minutes and that's it.
Garnish with jalapeños or red chile pepper and mangiamo!
